You will break exchange if you remove AD from an exchange server.  Likewise, you will break Exchange if you ADD Exchange to an DC.  Once Exchange is on a system, you CANNOT promote or demote it as a Domain Controller without causing major problems.

With the exception of SBS, I would recommend always running Exchange on a seperate server to AD.
